We had the Vegetarian Elevation tasting menu and it was incredible. Chef Virgilio has managed to highlight the Peruvian, Amazonian/Andean cuisine in a beautiful way.
What an experience! We had to wait a while but totally worth it and got a cocktail and dessert from the house. The service was great, the food even better and the view on the kitchen was a big plus!
If you can't snag a reservation before, arrive early to get on waiting list at lunch (get there at 12/12:15...they open at 12:45). Get the tasting menu at the bar .
If you're not in the mood for a wine pairing , they also offer a juice pairing (non-alcoholic) to go with their tasting menu .
I'm speechless after having the 11 course tasting menu . The octopus and the quinoa beef were my favorites. Don't forget to get piscos at the bar before your meal ;)

Definitely one of the best restaurants in the world. Everything was delicious - playful, creative; an explosion of flavours with every dish and great textures.
Great creative concept with their tasting menu , excellent presentation and good food. The touch with the art book at the end of the meal is great. All this being said, I was left a little underwhelmed
Virgilio's tasting menu is a very interesting exercise, it still needs further polishing, worth the try. I miss the a la carte menu it was excellent.

Tasting menu is provocative, creative & spotlights ingredients from vastly different elevations of Peru. $$$$. Think it was #4 On San pellegrino’s top 100. Make rez as far in advance as possible 🍴
Amazing tasting menu ; dish presentation; and cocktails . My favorite on the menu was the quinoa and veal along with the clams . All dishes arranged based on altitude.

Rising star Virgilio Martínez composes a multicourse lesson in biodiversity with ingredients such as cacao , chia, and maca root sourced from the Amazon. The freshwater fish arapaima is a signature.
Take the Elevation tasting menu with the wine pairing and expect to pay for it, not know what 90% of the ingredients are, and love every moment of it.
Go early and get the full tasting menu . Even if they day they are booked you can probably snag a table. Amazing dinner
Asado de tira cooked 24 hours , goat cheese caneloni and a superb Cabernet Andeluna Reserve 2006 from Mendoza Argentina!!!

Good settings but mediocre food. Asado de tira was good but not surprising. There is better fish at 30% of its price. Charged 60 soles for 2 bottles of water. Not going again, it was not worth it.

I ordered the conejo with pasta , but nothing extraordinary. The desert however, was the best I´ve tasted in Peru: Bosque de Cacao . The breads and the Ceviche were great. Expensive restaurant .
Consider it buying a ticket to a world class theater . Incredible innovation and attention to detail
It's not a traditional restaurant . One have to know what it is all about and decide whether one should go or not. Some dishes are good while others are just OK. Dishes explanation is better in Spanish
Cocktails are fantastic and the food is divine
Not sure how Virgil does it but he has captured the essence of magic in your mouth. Grilled palta-avocado is excellent
It was good, but I cannot say we were blown away. The trip trough the elevations needs some more coaching from the waiters I think. As it is the menu seems like a pretty random set of elevations .
Get ready to be impressed. They are doing some pretty innovative things here!
Lovely restaurant , amazing taste and is full of flavors. Do ask for the lamb .
