冷锅鱼据说是宋代大文豪苏东坡发明的。冷锅鱼以前是农村的下里巴人吃的，里面煲的主要是动物的内脏，而达官贵人要吃鱼火锅就要到江舫上吃新鲜打上来的鱼。 但美食家苏东坡觉得火锅的吃法太燥，就吩咐船上厨子用火锅料做佐料，将鱼通过爆、炒、熬等工序，先后放入各种佐料，鱼烹调好后才连火锅料一起装锅，端上桌时，鱼已烹熟，锅却还是冷的。
