冷锅鱼据说是宋代大文豪苏东坡发明的。冷锅鱼以前是农村的下里巴人吃的,里面煲的主要是动物的内脏,而达官贵人要吃鱼火锅就要到江舫上吃新鲜打上来的鱼。 但美食家苏东坡觉得火锅的吃法太燥,就吩咐船上厨子用火锅料做佐料,将鱼通过爆、炒、熬等工序,先后放入各种佐料,鱼烹调好后才连火锅料一起装锅,端上桌时,鱼已烹熟,锅却还是冷的。
